Cauli Mash

WOAH Cauliflower you really can be anything, huh? I’m a fan of cauliflower!! Riced, gnocchi or roasted with a yogurt drizzle YUMM! But I’d never had it mashed before. This is literally the easiest way I’ve cooked cauliflower before.

I just purchased a new food processor and decided to give cauli mash a go. I opted for a fully vegan recipe that’s flavorful and better for you and our planet. Thanks to Kite Hill’s new Sour Cream I was able to achieve the perfect consistency of a whipped mash.

I’ve been having this on repeat!! It’s the perfect base to mix and match with lentils, chicken, or ground turkey! Feeling like a lighter meal? Have it by itself there’s 10 grams of plant based protein in on serving!

Cauli Mash

The Easiest Cauli Mash (GF, VG)


Description

Fluffy cauliflower mash with a cheesy hint!


Ingredients

Scale
  • 1/2 head of an orange cauliflower
  • 2 tbsp Kite Hill sour cream
  • 1 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • dash of salt

Instructions

  1. Start by boiling water in a small pot fill 3/4th of the way.
  2. cut cauliflower in half, remove steams, wash and cut into florets.
  3. Once your florets have been trimmed and washed add to boiling water for about 8-10 minutes.
  4. Drain cooked cauliflower and add to food processor.
  5. Add sour cream garlic powder, onion powder and salt and set your processor to puree. Blend for about 2 minutes or there are no cauliflower chunks left.
  6. Serve in a bowl, feel free to top with paprika or another dollop of sour cream. Enjoy!!

Notes

The texture of this mash will resemble polenta. You want to blend until there are no florets left, but still have grain like bits.
