Pumpkin Hummus

Festive recipe perfect for fall, pumpkin gives this lemon-y hummus a pop of orange!

Ingredients

  • 1 15 oz can chickpeas
  • 1/4 cup tahini
  • 1/2 cup pumpkin puree
  • 2 tbsp olive oil
  • 3/4 juice of a lemon
  • 23 cloves garlic
  • Salt

Instructions

  1. Rise and drain chickpeas (save liquid from chickpeas in a separate cup).
  2. Recommended remove skins from chickpeas. 
  3. Add chickpeas and garlic to food processor and start blending.
  4. Slowly incorporate tahini, pumpkin puree, olive oil, salt, and lemon juice and continue blending.
  5. If hummus is too thick add 2-4 tbsp of chickpea liquid.
