Taco Tuesday? More like tacos every day in my household! As a dietitian, I’m looking for as much balance as possible in my meals. This means a source of protein, fat, carbs, fiber & greens/veggies at almost all my meals. If you know me, you know I preach tacos as the perfect fit for the above formula. It’s no surprise you can catch me eating tacos for both breakfast and dinner and on any given day.
Since I follow a gluten-free lifestyle, I’m on the lookout for healthier alternatives and products that can sub the place of traditional wheat containing items. I came across Tia Lupita’s on IG and a couple of days later at Whole Foods, I took this as a sign to get their classic tortillas. LET ME TELL YOU THEY ARE GOOD. I’m really big on consistency when it comes to gluten-free alternatives. I don’t want a tortilla I can’t fold up or will break apart. Tia Lupita’s cactus & corn tortilla are perfectly soft and can hold all the ingredients for a loaded and balanced taco.
I’ve turned the tortillas into chips using my air fryer. The company has a whole line of chips and hot sauce that I can’t wait to try! Come back next week for a review of their other items. Lentil Cactus Tacos – GF, Plant-Based

Description
Flavorful plant-based tacos on low-carb cactus tortillas. These warm tacos are filled with a nourishing blend of lentils and garbanzos beans, shredded plant based cheese, almond based sour cream and a slight spicy kick topped with lime and cilantro – truly everything a taco should be!
Ingredients
- Tia Lupita’s Cactus Tortillas
- Trader Joe’s Melodious Blend ( garbanzo & lentil mix)
- Red onion, diced
- Trader Joe’s Spicy Sauce
- Kite Hills Sour Cream
- Shredded Plant based cheese
- Avocado, diced
- Cilantro, chopped
- Lime Wedges
Instructions
1. Wet tortilla with water and place in air fryer at 350F for 2 minutes, then add shredded cheese to tortilla and place back in air fryer for another 2 minutes.
2. Sauté Melodious Blend (no need for oil since it comes with olive oil), add onion and spicy sauce and warm for about 5 minutes.
3. Remove tortillas from air fryer and plate, add warm Melodious Blend to cheesy tortilla, add a dollop of sour cream, diced avocado, chopped cilantro and a squeeze of lime!
