Easy Shredded Chicken


Description

I love this “set it and forget it” recipe for a busy weeknight dinner when I want to prioritize protein and taste! This shredded chicken is perfect for tacos, enchiladas and bowls!

 


Ingredients

Scale
  • 1 pound your choice of chicken (breast, tenders, thighs)

  • 1 tablespoon avocado oil

  • 1 jar of salsa (I’ve tried many different tomato based salsa – salsa verde, pepita salsa, mild, medium they all work great)


Instructions

  1. Heat your pan on medium heat and add 1 tablespoon of avocado oil.

  2. Rinse, butterfly and pound your chicken (Optional step but will help with even cooking).

  3. Sear chicken on each side for 5 seconds.

  4. Add entire jar of salsa to the pan, mix to coat chicken.

  5. Cover pan and let cook for 15 minutes (will vary based on thickness of chicken).

  6. I like to use a whisk to shred my chicken or you can use 2 forks. That’s it!

  7. Enjoy with your favorite tortilla (I like @siete chickpea) & a healthy fat or build a balance bowl with greens, roasted sweet potatoes (carbs) and avocado (fat)!

Notes

🪄Cycle Sync Tip: This recipe can be enjoyed all cycle long. It would be especially beneficial during your luteal phase where vitamin c is needed (tomatoes). Protein will help manage your blood sugar and satisfy hunger during your luteal phase (10-14 days before your period starts) where you are at an increased need for calories and less insulin sensitive.
