This week has gone by soooo slow! TGIT! Thursdays are the best day to get together with you friends, have some wine and plan out the weekend. Tell your friends to bring the wine and you got them covered with cheese. My autumn caprese salad that is!
This recipe is is fairly simpler, all you need is a trip to Trader Joe’s.

Description
Butter-y Honey Delicata Squash meets mozzarella.
Ingredients
- 1 Delicate Squash
- 1 Mozzarella Log (pre-sliced) 7 oz.
- 15 Kalamata Olives
- 1/2 tbsp Olive Oil
- 1/2 Balsamic Glaze
- Salt
- Pepper
Instructions
- Pre-heat oven to 425 degrees.
- Wash squash.
- Slice into 1/4 inch slices. Do not peel.
- Use a spoon to scoop out seeds.*
- Drizzle about 1/4 tbsp olive oil and salt. Toss. Spread out on a baking sheet. Place in oven once it reaches 425.
- If you didn’t get a pre-sliced mozzarella log, slice into 1/4 inch pieces.
- Remove squash from oven and remove from baking sheet, let cool.
- To plate: alternate between mozzarella slices and squash. Top with kamata olives. Drizzle balsamic glaze.
- Optional drizzle olive oil, salt and pepper. Enjoy!
Notes
You can save seeds to roast and using for toppings in other dishes!
