Description
A classic vegan and gluten free banana bread with a sweet touch of cookie butter! This banana bread is rich in cinnamon – taste like a hug in every bite on a chilly evening.
Ingredients
- 3 ripe bananas
- 1 and 3/4 cups of gluten free flour (I used King Arthur Flour, All-Purpose Flour, Gluten Free)
- 1/4 cup coconut sugar
- 1 tsp baking power
- 1 tsp baking soda
- 1 tsp cinnamon
- 4 tbsp Califa Farms Cookie Butter Creamer
- 3 tbsp coconut oil (melted)
- 1/4 cup chocolate chips (Hu Kitchen)
Instructions
- Preheat oven to 355F.
- Line a 9×5″ baking pan with parchment paper.
- Smash bananas until the mixture is an applesauce consistency.
- In a separate bowl mix gluten free flour, coconut sugar, baking power, baking soda, cinnamon. Then add in Cookie Butter Creamer and melted coconut oil and fully incorporate into dry ingredients (will look dry, do not add in more liquid).
- Add in mashed bananas to mixture and fully combine. Stir in chocolate chips.
- Pour mixture into lined baking tin. Top with more chocolate chips (optional).
- Bake for 40 minutes.
- Remove from oven, remove from baking tin and let cool on a cookie rack. Slice and enjoy!
