‘Bacon’ Gnocchi n’ Cheese

‘Bacon’ Gnocchi n’ Cheese

Ingredients

2 Shiitake Mushroom Tops

1 packet Frozen Trader Joe’s Cauliflower gnocchis  

Olive oil

For the sauce:

1/4 Hass Avocado

3 tablespoons Nutritional Yeast

2 tablespoons Unsweetened Coconut Milk (any milk is fine) 

Salt

Instructions

  1. Coat saucepan in olive oil (less than 1 tbsp).
  2. When the oil is warm-hot add bag of frozen cauliflower gnocchis.
  3. Stir and let brown for about 10 mins, then flip and cook for another 10 mins.
  4. In a bowl, smash avocado then add 2 tbsps nutrition yeast and mix.
  5. Start adding milk to reach desired consistency (can also use water).
  6. Adjust to taste with additional nutritional yeast and salt.
  7. Once cooked remove gnocchis, add sauce to the same pan and warm. Return gnocchi to pan and toss to coat with sauce.

Topping

    1. Wash Shiitake mushroom tops.

  1. Thinly slice mushroom. Drizzle with olive oil.
  2. Add sliced mushrooms to a separate saucepan on medium high heat and do not stir. Allow mushrooms to sizzle and crisp!
  3. Remove from heat! Feel free to crumble up and use as a topping or mix into your gnocchi!
