‘Bacon’ Gnocchi n’ Cheese
Ingredients
2 Shiitake Mushroom Tops
1 packet Frozen Trader Joe’s Cauliflower gnocchis
Olive oil
For the sauce:
1/4 Hass Avocado
3 tablespoons Nutritional Yeast
2 tablespoons Unsweetened Coconut Milk (any milk is fine)
Salt
Instructions
- Coat saucepan in olive oil (less than 1 tbsp).
- When the oil is warm-hot add bag of frozen cauliflower gnocchis.
- Stir and let brown for about 10 mins, then flip and cook for another 10 mins.
- In a bowl, smash avocado then add 2 tbsps nutrition yeast and mix.
- Start adding milk to reach desired consistency (can also use water).
- Adjust to taste with additional nutritional yeast and salt.
- Once cooked remove gnocchis, add sauce to the same pan and warm. Return gnocchi to pan and toss to coat with sauce.
Topping

Wash Shiitake mushroom tops.

- Thinly slice mushroom. Drizzle with olive oil.
- Add sliced mushrooms to a separate saucepan on medium high heat and do not stir. Allow mushrooms to sizzle and crisp!
- Remove from heat! Feel free to crumble up and use as a topping or mix into your gnocchi!
