Baked Key Lime Donuts

Hello peeps! It has been a very rainy week down in Florida. Last night I was having some friends over to watch the second season of 13 Reasons Why and I thought what goes great with TV? Food, duh! Sweets to be specific. *Cue Key Lime Donuts* I love baking, it’s fairly easy and a great way to get creative. Extremely mess though, there’s flour all over my kitchen haha.

I promise I have not forgotten about this blog. I’ve been running around and taking on a bunch of new tasks. I will be writing a personal post soon so that you guys can get to know me a little better. This blog is new so if you don’t follow me on Instagram you probably have no idea what I’m like.

Anyways back to these donuts!

I’ve made donuts before, but I must say these are by far the best I’ve baked. I might be biased because I love Key Lime flavor. Let me know what your favorite flavor is and what you want me to bake next!! Well, I’m off to watch the Royal Wedding and keep binging 13 Reasons Why with my donuts and tea! Have a lovely weekend!

Baked Key Lime Donuts

Serves: 10

Ingredients

For the donuts:
• 1 heaping cup of cake flour (sifted)
• 1 teaspoon baking powder
• ¼ teaspoon salt
• ⅓ cup vanilla Greek yogurt
• ⅓ cup + 1 tablespoon granulated sugar
• 2 1/2 tablespoons fresh key lime juice
• 1 teaspoon key lime zest
• 2 tablespoons unsalted butter, melted
• 1 large egg
• 1 teaspoon vanilla extract

For the glaze:
• 1 cup powdered sugar
• 1-2 tablespoons of your choice of milk

Topping:
• Crushed graham cracker

Instructions

Donuts:

-Preheat oven to 350°F. Brush a donut pan with butter and set aside.
-In a mixing bowl, mix together the Greek yogurt, sugar, key lime juice, key lime zest, melted butter, egg, and vanilla until well combined. (I use a KitchenAid mixer).
-In a large mixing bowl, mix together the flour, baking powder, and salt. Set aside.
-Add the dry ingredients to the wet ingredients and mix until just combined.
-Pipe or spoon the batter into the donut cavities, you should end up with about 10 small donuts. If using a 6-count donut pan, you will need to bake in two separate batches. For the second batch make 4, not 6.
-Bake at 350°F for 12-14 minutes or until a toothpick inserted into the donut comes out clean. Remove from the oven and cool in the pan for 5 minutes. Remove the donuts from the pan and transfer to a wire rack to cool.

Glaze:

-Add the powdered sugar and milk to a mixing bowl and mix until well combined. If the glaze is too thick, add a little extra milk to thin it out. If the glaze is too thin, add a little extra powdered sugar to thicken it up.
-Dunk each cooled donut into the glaze and return back to the wire rack. Top with crushed graham crackers if desired. Serve and enjoy!

P.S. For a healthier alternative top with leftover greek yogurt instead of the glaze.
